Description
These easy strawberry brownies start with just a box of strawberry cake mix and turn into the most moist, fudgy bars you'll ever taste. With a gorgeous pink color and homemade strawberry glaze, they look bakery-fancy but take only 10 minutes to prep.
Ingredients
- 15.25 ounce box strawberry cake mix
- ⅓ cup vegetable oil
- 2 large eggs
- ⅔ cup powdered sugar
- 2 Tablespoons strawberry jam
- 2 Tablespoons heavy cream or milk
- Pinch of fine sea salt
Instructions
- Preheat your oven to 350°F.
- Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides.
- In a large bowl, combine strawberry cake mix, vegetable oil, and eggs.
- Stir everything together until just combined.
- Press the dough evenly into your prepared pan.
- Bake for 18-20 minutes until a toothpick inserted in the center comes out clean.
- Let the brownies cool completely in the pan.
- In a medium bowl, whisk together powdered sugar, strawberry jam, heavy cream, and salt until smooth.
- Pour the glaze over cooled brownies and spread evenly.
- Once the glaze has set (about 15 minutes), lift out using parchment paper.
- Cut into 16 equal bars with a sharp knife.
Notes
Don't overbake - the difference between fudgy and dry brownies is 2-3 minutes. Let brownies cool completely before adding glaze. Press dough evenly into pan, wetting hands slightly to prevent sticking. For extra special brownies, fold in ½ cup white chocolate chips to the batter.
